Ingredients
- 500g lean turkey mince
- 1 egg
- 30g (¼ cup) grated parmesan
- 1 tsp dried oregano
- 1 tbsp olive oil
- 2 courgettes (zucchini), sliced into half-moons
- 500g passata (sieved tomatoes)
- Salt and black pepper
Method
- 1Mix the turkey mince, egg, parmesan, oregano, salt and pepper, then roll into small meatballs.
- 2Heat the olive oil in a large pan and brown the meatballs all over for about 5 minutes.
- 3Add the courgette and cook for 2 minutes.
- 4Pour in the passata, cover, and simmer gently for 12–15 minutes until the meatballs are cooked through.
