Ingredients

  • 500g lean turkey mince
  • 1 egg
  • 30g (¼ cup) grated parmesan
  • 1 tsp dried oregano
  • 1 tbsp olive oil
  • 2 courgettes (zucchini), sliced into half-moons
  • 500g passata (sieved tomatoes)
  • Salt and black pepper

Method

  1. 1Mix the turkey mince, egg, parmesan, oregano, salt and pepper, then roll into small meatballs.
  2. 2Heat the olive oil in a large pan and brown the meatballs all over for about 5 minutes.
  3. 3Add the courgette and cook for 2 minutes.
  4. 4Pour in the passata, cover, and simmer gently for 12–15 minutes until the meatballs are cooked through.
