Beef & Broccoli Bowl

The takeaway version is usually swimming in cornstarch. This one uses just enough to cling, so you taste beef and ginger rather than thickener. Slice the steak against the grain and keep the pan properly hot.
One meal won't hit a daily target on its own — here's how much protein you actually need on a GLP-1.

Ingredients
- 1 1/4 lb flank steak (sliced thin against the grain)
- 3 tablespoons low sodium soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 2 teaspoons cornstarch
- 4 cups broccoli florets
- 3 garlic cloves (sliced)
- 1 tablespoon grated fresh ginger
- 3 cups cooked brown rice
- 2 sliced scallions
- 1 teaspoon toasted sesame seeds
Method
- 1Toss the sliced beef with 1 tablespoon of the soy sauce and 1 teaspoon of the cornstarch. Leave for 10 minutes.
- 2Stir the remaining soy sauce, oyster sauce, sesame oil and cornstarch together with 1/3 cup water.
- 3Sear the beef in a very hot skillet in two batches, 1 to 2 minutes a batch, until browned at the edges. Set aside.
- 4Add the broccoli with a splash of water, cover and steam for 3 minutes, then stir in the garlic and ginger for 30 seconds.
- 5Return the beef, pour in the sauce and toss for 1 minute until glossy. Serve over rice with scallions and sesame seeds.
Tips for GLP-1 appetites
- Two batches, not one. Crowding the pan steams the beef grey instead of searing it brown.
- Against the grain is the whole game with flank. Cut with it and the beef turns chewy.
- Broccoli adds 4g of fiber a serving, which is the nutrient most people lose when appetite drops.
