Steak & Sweet Potato Hot Honey Bowl

Hot honey over steak and roasted sweet potato is the combination that earned its popularity. The honey hits the hot steak and goes glossy, the chili wakes everything up, and the sweet potato underneath soaks up whatever runs off.
One meal won't hit a daily target on its own — here's how much protein you actually need on a GLP-1.

Ingredients
- 1 1/4 lb sirloin steak
- 2 large sweet potatoes (cut into 1 inch cubes)
- 1 tablespoon olive oil
- 1 teaspoon smoked paprika
- 2 tablespoons honey
- 1/2 teaspoon crushed red pepper flakes
- 1 teaspoon apple cider vinegar
- 4 cups baby spinach
- 1/2 cup crumbled feta
- 1/4 cup toasted pumpkin seeds
Method
- 1Heat the oven to 425F. Toss the sweet potato cubes with the olive oil and smoked paprika and roast for 25 to 30 minutes, turning once, until caramelized at the corners.
- 2Warm the honey with the red pepper flakes and vinegar in a small pan for 1 minute, then take it off the heat.
- 3Season the steak well and sear in a very hot skillet for 3 to 4 minutes a side for medium rare. Rest for 8 minutes.
- 4Wilt the spinach in the residual heat of the steak pan for about 30 seconds.
- 5Slice the steak against the grain. Build the bowls with sweet potato, spinach and steak, spoon over the hot honey and finish with feta and pumpkin seeds.
Tips for GLP-1 appetites
- Eight minutes of rest is not optional on a seared steak. Cut it early and the bowl fills with juice.
- Make a double batch of the hot honey. It keeps for weeks and lifts roasted vegetables and eggs.
- Sweet potato and spinach together bring 8g of fiber a serving.
