Ingredients

  • 2 salmon fillets (about 130g each)
  • 200g cherry tomatoes
  • 1 bunch asparagus, trimmed
  • 1 tbsp olive oil
  • ½ lemon, sliced
  • 1 tsp dried oregano or mixed herbs
  • Salt and black pepper

Method

  1. 1Heat the oven to 200°C (400°F).
  2. 2Scatter the tomatoes and asparagus on a baking tray, drizzle with the olive oil, and season.
  3. 3Nestle the salmon fillets among the vegetables, top with lemon slices, and sprinkle with the herbs.
  4. 4Roast for 12–15 minutes, until the salmon flakes easily and the tomatoes have burst.

  • The natural fat in salmon makes it filling, so a smaller fillet often satisfies on GLP-1 medication.
