Ingredients
- 2 salmon fillets (about 130g each)
- 200g cherry tomatoes
- 1 bunch asparagus, trimmed
- 1 tbsp olive oil
- ½ lemon, sliced
- 1 tsp dried oregano or mixed herbs
- Salt and black pepper
Method
- 1Heat the oven to 200°C (400°F).
- 2Scatter the tomatoes and asparagus on a baking tray, drizzle with the olive oil, and season.
- 3Nestle the salmon fillets among the vegetables, top with lemon slices, and sprinkle with the herbs.
- 4Roast for 12–15 minutes, until the salmon flakes easily and the tomatoes have burst.
