Ingredients

  • 16 oz boneless skinless chicken breasts
  • 1 red bell pepper (cut into strips)
  • 1 green or poblano pepper (cut into strips)
  • 1 medium onion (cut into strips)
  • 3 tbsp lime juice
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • pinch ancho or Mexican chili powder ( to taste)
  • salt and pepper to taste
  • 2 tsp olive oil
  • 8 reduced-carb whole wheat flour tortillas (or corn tortillas for GF)
  • 1/2 cup reduced fat shredded Mexican cheese
  • reduced fat sour cream (optional)
  • guacamole (optional)

Method

  1. 1Toss the chicken with the lime juice and season with chili powder, salt, pepper, garlic powder and cumin.
  2. 2Season the peppers and onion with salt and pepper and toss with the olive oil.
  3. 3Cook the vegetables covered in a cast-iron skillet over medium heat until tender — about 15 minutes outdoors on the grill, or 16–18 minutes in a large skillet on the stove.
  4. 4Heat a grill or grill pan over medium and cook the chicken about 8 minutes a side, until cooked through.
  5. 5Rest the chicken on a board, slice into strips, then toss it with the peppers and onion.
  6. 6Serve right away with warm tortillas, cheese and your toppings.
