Ingredients
- 16 oz boneless skinless chicken breasts
- 1 red bell pepper (cut into strips)
- 1 green or poblano pepper (cut into strips)
- 1 medium onion (cut into strips)
- 3 tbsp lime juice
- 1 tsp ground cumin
- 1 tsp garlic powder
- pinch ancho or Mexican chili powder ( to taste)
- salt and pepper to taste
- 2 tsp olive oil
- 8 reduced-carb whole wheat flour tortillas (or corn tortillas for GF)
- 1/2 cup reduced fat shredded Mexican cheese
- reduced fat sour cream (optional)
- guacamole (optional)
Method
- 1Toss the chicken with the lime juice and season with chili powder, salt, pepper, garlic powder and cumin.
- 2Season the peppers and onion with salt and pepper and toss with the olive oil.
- 3Cook the vegetables covered in a cast-iron skillet over medium heat until tender — about 15 minutes outdoors on the grill, or 16–18 minutes in a large skillet on the stove.
- 4Heat a grill or grill pan over medium and cook the chicken about 8 minutes a side, until cooked through.
- 5Rest the chicken on a board, slice into strips, then toss it with the peppers and onion.
- 6Serve right away with warm tortillas, cheese and your toppings.
