Ingredients
- 8 medium chicken drumsticks (skin removed)
- olive oil spray
- 3/4 cup water
- 1 tbsp sriracha
- 1/3 cup balsamic vinegar
- 1/3 cup low sodium soy sauce
- 1 tbsp honey (or sugar)
- 3 cloves garlic (crushed)
- 1 tsp ginger (grated)
- 2 tbsp chives or scallions (chopped)
- 1 tsp sesame seeds
Method
- 1Brown the drumsticks in a large heavy saucepan over high heat with a little oil spray, 3–4 minutes.
- 2Add the water, balsamic, soy sauce, honey, garlic, ginger and sriracha and bring to a boil.
- 3Lower the heat and simmer, covered, for about 20 minutes.
- 4Uncover, raise the heat, and let the sauce reduce for 8–10 minutes until thick and glossy, turning the drumsticks now and then so the glaze doesn't scorch.
- 5Move the chicken to a platter and spoon the sauce over.
- 6Finish with chives and sesame seeds and serve.
