Ingredients

  • 8 medium chicken drumsticks (skin removed)
  • olive oil spray
  • 3/4 cup water
  • 1 tbsp sriracha
  • 1/3 cup balsamic vinegar
  • 1/3 cup low sodium soy sauce
  • 1 tbsp honey (or sugar)
  • 3 cloves garlic (crushed)
  • 1 tsp ginger (grated)
  • 2 tbsp chives or scallions (chopped)
  • 1 tsp sesame seeds

Method

  1. 1Brown the drumsticks in a large heavy saucepan over high heat with a little oil spray, 3–4 minutes.
  2. 2Add the water, balsamic, soy sauce, honey, garlic, ginger and sriracha and bring to a boil.
  3. 3Lower the heat and simmer, covered, for about 20 minutes.
  4. 4Uncover, raise the heat, and let the sauce reduce for 8–10 minutes until thick and glossy, turning the drumsticks now and then so the glaze doesn't scorch.
  5. 5Move the chicken to a platter and spoon the sauce over.
  6. 6Finish with chives and sesame seeds and serve.
