Ingredients
- 4 boneless (skinless chicken breasts (about 8 oz each, sliced in half lengthwise to make 8))
- 3/4 cup seasoned breadcrumbs (such as 4C (you can also use GF crumbs))
- 1/4 cup grated Parmesan cheese (or Romano cheese)
- 2 tbsp butter (melted (or olive oil))
- 3/4 cup part-skim mozzarella cheese (I like Polly-o)
- 1 cup marinara sauce
- cooking spray
- basil (or parsley (optional for garnish))
Method
- 1Heat the oven to 450°F and give a large baking sheet a light coat of cooking spray.
- 2Stir the breadcrumbs together with the Parmesan in one bowl, and melt the butter in a second. Brush each piece of chicken with a thin layer of butter, press it into the crumb mixture to coat, and lay it on the prepared sheet; repeat with the rest.
- 3Mist the tops with a little oil and roast for 25 minutes.
- 4Pull the pan out and spoon about a tablespoon of marinara over each cutlet, then scatter roughly 1 1/2 tablespoons of mozzarella on top.
- 5Return to the oven for about 5 minutes, just until the cheese melts.
